The knife is hand forged from Sandvik 14c28n steel, which is used in professional kitchen knives. The paring knife has been developed for cooking and is therefore not suitable for cutting through bones. The egg is ground at 17° for ultimate sharpness and best possible functionality, and the shaft is made of colored maple. The paring knife comes with a notch in the blade, which gives better room for the fingers when fine work. The blade is stainless steel, which is why it does not need oil, just wipe it after use. The sheath is hand-sewn in Denmark. The knives in the Berthelsen kitchen series are made in collaboration with professional chefs.
